Last week Jeramy received a call from one of our specialty purveyors about an upcoming harvest of mushrooms. Not just any mushrooms, but rather the fungi of a chef’s dream. Would we be interested? Jeramy’s reply, “of course!” Staring at our delivery, we knew we had to do something special to showcase the outstanding flavor. Something, perhaps, a bit over the top. After doing a bit of brainstorming and recipe research, Jeramy felt we might need to defer to a greater authority. No, not The Authority, but rather, one of America’s greatest chefs: Thomas Keller, natch. Read below to see how Keller and a box of mushrooms came to inspire our Weekly Wine Pairing this week!

“French Mushrooms, Mousseron are the gold standard of the fungi family, which is very much reflected in the price of these delicacies. With a deep rich yellow (one might say golden) hue, skinny stems, and exquisite gills, the mushrooms are slightly similar to Porcinis, but with an unparalleled depth of flavor. Soft and chewy, with earthy aromas, absolutely made for featuring in our take on a very famous chef’s recipe. With a towering buttery crust, and rich egg custard, these mushrooms strike just the right balance in the quiche.” – Jennifer

Just Perfect.
“This wine has the perfect profile to match the cuisine for this week. Intense savory flavors of mushroom (what else?), dried cherry, hoisin, and bright acid for a finish that zips with the salad. Upon learning that the winery owner is a former restauranteur, this perfect balance of flavors complimenting food made perfect sense.”
